Ingredients
- 1 green poblano pepper, diced
- 1 large yellow onion, chopped
- 1 lime, for garnish
- 1 pound zucchini, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 tablespoon finely grated fresh ginger
- 1 tablespoon kosher salt, plus more to taste
- 1 tablespoon packed brown sugar
- 1 teaspoon ground turmeric
- 1 teaspoon paprika
- 1/2 cup ketchup
- 1/2 cup roasted peanuts, plus more for garnish
- 1/2 teaspoon cayenne pepper
- 2 1/2 pounds skinless, boneless chicken thighs, cut into 2-inch pieces
- 2 cups hot cooked rice
- 2 tablespoons vegetable oil
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 3 1/2 cups chicken broth, or to taste
- 3 tablespoons chopped fresh cilantro, for garnish
- 3/4 cup unsweetened natural peanut butter
- 6 cloves garlic, minced
Directions
First of all, mix salt, cumin, turmeric, paprika, coriander, and cayenne pepper together in small bowl.
Then just place chicken pieces in separate bowl and add 1/2 of spice blend. Mix it all together thoroughly just to coat each surface with the spice blend.
Heat the oil over high flame in a heavy pot. Brown half chicken pieces from all sides. Transfer it to bowl. Repeat it with rest of the chicken.
Time to reduce the heat to medium and add some onions to pot. Sauté until onions start turning translucent and golden, 2 min. Add garlic as well as ginger then just cook about 1 min. Stir in the remaining spice blend and just cook & stir for 1 minute. Pour in some chicken broth. Add the browned chicken along with accumulated juice. Stir in some peanut butter and ketchup then just add brown sugar. Bring it to simmer and reduce heat to maintain a gentle & steady simmer. Simmer, stir it occasionally for about 30 min.
Then it’s time to transfer the zucchini, red and peanuts to pot. Stir it to mix. Keep it simmering until the chicken and vegetables are fork tender for about 40 minutes. Remove it from heat.
Finally, serve it over rice with squeeze of lime and sprinkle of peanuts as well as chopped cilantro.
