Ingredients
- 1 (8 ounce) can sliced bamboo shoots
- 1 1/4 cups chicken broth
- 1 pinch paprika, or to taste (optional)
- 1 tbsp. Cajun seasoning blend
- 1 tbsp. cornstarch
- 1/2 cup cashews
- 1/2 red bell pepper, cut into thin strips
- 10 small spears fresh asparagus
- 2 cups shredded cabbage
- 2 green onions, chopped
- 2 tbsp. olive oil, divided
- 25 sugar snap peas, chopped
- 3 stalks celery, chopped
- 4 skinless, boneless chicken breast halves
- 4 tsp. soy sauce, divided
Directions
First of all, you will sprinkle chicken pieces with Cajun seasoning.
Then just whisk chicken broth with cornstarch, and 3 tsp. soy sauce together in a bowl until it’s completely blended.
Heat 1 tbsp. olive oil in deep frying pan over high heat. Cook and then stir chicken in hot oil until it’s cooked through, 6 to 10 min. then simply remove chicken from pan and then drain any accumulated liquids.
Time to heat remaining 1 tbsp. olive oil in frying pan over high heat. Simply then stir fry cabbage, celery, snap peas, asparagus, green onions, red bell pepper, and bamboo shoots for 1 min. Stir in 1 tsp. soy sauce. Continue cooking until vegetables are tendered but still crisp, about 3 min.
Finally, you are supposed to stir chicken into cabbage mixture. Pour chicken broth mixture over the chicken mixture, reduce the heat to medium, and then just simmer until sauce thickens, about 1 min. time to reduce heat to low then add cashews and simply cook until it’s heated through, 1 min. then just sprinkle with paprika.
